Next time you are in Jamaica and you feel the island heat, you might want to try making your own special glass of pina colada. Try the variety of rums, as well as natural Jamaican pineapple and coconut. Surprisingly the coconut cream does wonders for your body.
Here’s a creative pina colada recipe which yields one single serving.
INGREDIENTS:
1/4 oz. sugar syrup
2 oz. coconut cream (best made fresh from grated or blended coconut)
3 oz. pineapple juice
3 drops angostura bitters
1/4 oz. red rum – apricot brandy or can be used
1 oz. evaporated milk
A pinch of cinnamon powder and nutmeg powder
1 cherry from the tin or bottle
METHOD:
In a blender, add crushed ice and blend all ingredients EXCEPT the cherry together. When it’s smooth, pour into a glass and put the cherry on top for added flavour and presentation. You may want to sprinkle either cinammon or nutmeg across the top of the mushy ocean you’ve just created. Now sit back and ENJOY!
