Sweet and spicy Jamaican plantain fritters



Plantain fritters

(5-7)

Ingredients:
One huge overripe plantain
1 teaspoon baking powder
1 cup of flour
1 teaspoon vanilla (with almond flavouring)
Pinch of salt
3 teaspoon Sugar to sweeten (if honey is preferably used, use less water)
1/4 cup of water(add water till desired consistency)
1 egg (optional)
1/2 teaspoon cinnamon powder(optional)

Oil for frying

METHOD:
In a bowl, squash out the plantain
Add the sugar, vanilla and keep squashing till smooth and lump free. To this add the slightly beaten egg. Do not beat the egg too much or the batter will be stiff.
In another bowl, mix all dry ingredients. Make sure to add the baking powder last
Make a well in the middle and pour in the plantain batter
Add water
Stir everything in one direction until batter is smooth and slightly watery. It should have a milk shake consistency
Refridgerate for 5-10 minutes

Heat oil in a pan
Add spoonfuls of the batter in the frying pan and turn each fritter once the under edges are crispy and golden brown
When both sides are golden brown, remove and drain on paper towel on a plate
Serve hot
